Tasting Notes: A delicious Brut Sauvignon Blanc - German Sparkling Sekt.  Brimming with tropical fruits, hints of elderflower, gooseberry, citrus and herbs. Showing the typical vibrant Sauvignon Blanc character meld together to form a lovely, soft mousse and refreshing clean sparkling wine.  Vibrant, fresh and youthful with impressive length.  The finish has delicious zip with excellent structure. 

Made in the traditional method as Champagne.  The bottle fermentation brings the biscuity notes to the flavour. Oliver Zeter is the German master for Sauvignon Blanc - this wine is another example of his expertise.

A total of eight vineyards in southern Palatinate and Mittelhardt are planted with seven different Sauvignon Blanc clones. The distinct advantage is the different microclimates of the various sites which is beneficial in terms of flavour diversification. The soils in which the vines grow are just as distinct as the sites themselves. Training usually occurs as cordon which leads to a grape area that is linear and therefore easier to handle. The vineyards are mainly kept green due to natural herbs and sown grass.

Depending on the year, harvesting occurs either by hand or with a harvester. Some of the grapes may already be relatively green with a sugar content of potentially 10% degrees alcohol while most are fully ripe and the rest may even be slightly overripe. The CO2 which is added as dry ice prevents oxidation during several hours of maceration. This fosters an optimal bouquet aroma. The grapes are then pressed in an air sealed pneumatic press. Fermentation occurs in stainless steel tanks of various sizes. Here, a variety of yeasts provides the necessary diversification. In addition, some of
the wine is fermented spontaneously while another smaller amount is even
aged in oak barrels. The young wine is filtered only once before bottling
using a diatomite filter. At that time, the various individual bins are merged into the final blend. The result is a multifaceted aromatic and more present wine with structure and length.

Oliver Zeter is not your typical winemaker, forced to balance a family winemaking tradition against his own vision.  He considers himself lucky to have started from scratch. Oliver bottled his first vintage in 2007 and is already highly regarded in the winemaking industry, and one of the rising stars of the Pfalz region.  An importer first, he converted to winemaking following a trip to South Africa where he fell in love with Sauvignon Blanc.  He planted seven clones of the variety, which happily was suited to the soil and climate.

His vineyards now cover 25 hectares along the Deutsche Weinstrasse from Ungstein in the north to Pleisweiler in the south.  The winery is in the heart of Pfalz (Palatinate) on the edge of Haardt, built in 1922 and now meticulously renovated.

The affable bear on the wine labels is by artist Otto Dill, a friend of Oliver's great-grandfather Richard Baer.  The original bear image hangs in their kitchen, Oliver felt it right that this image of a thirsty bear who strongly resembles his great-grandfather, should appear on his wine bottles.
