Tasting Notes: Aromas : The signature Daftmill Distillery character is immediately present, showcasing green fruits, layered with herbal nuances, toasted almonds and a hint of sandalwood.  As it opens up, comforting aromas of freshly baked croissants and marzipan unfold from the glass.  A splash of water reveals fennel, cumin and creamy butterscotch sweets.  The palate is a well balanced contrast of sweet and dry elements. The profile is initially led by sweet fruits and traditional Scottish tablet, transitioning gracefully into drier fruit tea and gentle herbal undertones.  The finish is medium in length, once again showcasing a refined balance and complexity, leaving a final, elegant floral impression.

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm's quiet periods; mid summer and winter, sometimes producing as few as 100 casks per year.  When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whiskey.

The barley variety Publican was grown in the 43ac field and was harvested by John and Sandy on the 29th & 29th of August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.

The whiskey that went into this bottling came from twenty-seven first fill ex bourbon barrels, which were filled in December 2011.  Then matured n the upper level of the farms dunnage warehouse until bottling in 2024.
