Tasting Notes: Aromas of nuts, brioche and golden apples. When young it is quite pale, taking on golden or straw-colored tints with the years. Very pleasant with citrus and flower notes, evolving to buttery and brioche notes with age. Very fresh and lively.
This wine is an intermingling of grapes from different areas, each for their own very special characteristics. Those from the Mâconnais give fattiness and suppleness, while those from the Yonne and the Châtillonnais give liveliness and freshness.
Founded in 1816, the maison Jaffelin house is now considered the smallest of the great houses of Burgundy, one of the few that still makes wine in the historical centre of Beaune in oval wooden vats. The Jaffelin estate presses its grapes in a vertical wine-press; a rare, traditional technique using handmade vats. The house Jaffelin vinifies and ages his wines in the historic centre of Beaune in the prestigious cellars of the Chapter of Our Lady of the twelfth century, maintaining traditional methods. This allows for “hand sewn” wines coming from “small villages” as Rully, Santenay, Monthélie, Fixin but also best known villages such as Beaune, Gevrey-Chambertin, Nuits-Saint-Georges, Chambolle Musigny.
