Tasting Notes: Citrus, honey, herbal, peachy stone fruits and a really pleasing silk like texture
The vines for The Ruse are planted at altitude in the cooler slopes of the Pyrenees on clay and limestone in the Haute Vallée de l’Aude. Normally these grapes would be destined for a Cremant de Limoux, however these grapes are left on the vines for much longer and are one of the latest varieties to be picked. This helps to retain ripeness and a refreshing crispness helped by the altitude. Vinification and maturation takes place in a combination of new and seasoned French oak.
Food Match : Brilliant on it's own, with some mouth tingling Asian dishes, or some spicy, sticky pork belly.
