Tasting Notes: Deep dark red in colour - almost black. Aromas of black and red fruits, earthy forest floor, pepper, liquorice, menthol and subtle herbaceous hints. The palate is fleshy and generous, light fresh acidity with silky smooth tannins. the flavours become more generous with time - let this wine breathe before drinking. Beautiful aromatic persistence.
Aged for 12 months on the lees to develop fruit and delicacy. Cellared for a further 18 months before release. Plot by plot, each grape variety is harvested separately. the grapes are put into stainless stell tanks for 4 to 6 weeks, which allows a slow and gentle extraction, showing proof of a perfect expression of the soil. Each plot is identified in individual stainless vats to perform and sublimate future blending of wines.
